Tuna buzzonaglia is a traditional Sicilian ingredient. It comes from the fillet in contact with the central bone of the fish; it's a dark meat with rich flavour. The capers grow in Linosa, a small island between Sicily and Tunisia. They are preserved in 3% of salt so they can be used directly in your dish. I like the combination of strong flavours with the freshness of the lemon zest and parsley.
